One of the most international cold and creamy soups out there, it is an essential dish during summer. We are talking about vegan Vichyssoise! Take a look at the steps of this receipt and prepare it in just some minutes! It is the prefect dish to fight off the heat!

Wash and cut the vegetables. Peel off the potatoes and break them.

Add oil into a pot and stir-fry the spring onion until it starts to turn transparent. Then, add the potatoes and the leek cook them along with the spring onion for 4-5 minutes, and stir from time to time.

Add water to cover the ingredients and boil. Once boiling, shred one tablet of Organic Vegetable Broth and let it cook for 15-20 minutes.

After that time, remove from the heat and add one cup of Organic Soy Drink. Then, grind everything and add salt and pepper to your taste. You can use a cone strainer to make the cream more homogenic and softer for a finishing touch.

Vichyssoise is served cold, so it should rest inside the fridge for six hours more or less.

When serving, you can add a spoon of brewer’s yeast or, if you prefer, some cut chive.
